Pu-erh teas have a strong, earthy flavor and aroma with deep reddish color. The Pu-erh leaves are processed differently than green tea leaves. They are oxidized similar to an oolong tea, but not as long as black tea. Quality Pu erh tea begins with a variety of leaf from exceptionally broad-leaved tea trees in Yunnan province. The tea is either left loose or pressed into cakes, bricks, bowls…, permitted to retain a bit of moisture-content that the tea continues to ferment slowly over time. For this reason, pu erh can be stored open so that oxygen can continue to refine the tea.
