PROPERTIES: White monoclinic crystalline powder, soluble in dilute hydrochloric, nitric and acetic acids, slightly soluble in water, insoluble in ethanol. it may lose crystal water and convert to anhydrous when heated to 75`C.
USES: In food industry, it is used as leavening agent, dough modifier, buffer, nutritional supplement, emulsifier, stabilizer, such as leavening for flour, cake, pastry, bake, double acid type flour color modifier, modifier for fried food, also used as nutrient additive or modifier for biscuit, milk powder, cold drink, ice cream powder.
