Spiraeoside (quercetin-4'-O-(Beta) -D-glucoside) , rutin and quercetin and 3 other not identified compounds were found as the major constituents. Significant cultivar differences were found. The most abundant compound was spiraeoside (32 234 mg/kg DM in Karmen, 23 283 mg/kg DM in Vsetana and 265 mg/kg DM in Ala) . Rutin ranged from 15 in Ala to 157 mg/kg DM in Karmen and quercetin from 1.3 in Ala to 163 mg/kg DM in Karmen. During storage, an increase in flavonoids could be observed, especially at a laboratory temperature compared to storage at a lower temperature.

In onion, spiraeoside (quercetin-4'-O-(Beta) -D-glucoside) , rutin and quercetin and 3 other not identified compounds were found as the major constituents. Significant cultivar differences were found. The most abundant compound was spiraeoside (32 234 mg/kg DM in red onion, 23 283 mg/kg DM in yellow onion and 265 mg/kg DM in white onion) .

We use the red onion for extraction, which contains the highest spiraeoside, theoretically, we believe 10:1 (dry base) can reach 0.02% spiraeoside. If 10:1 on dry base, the price will be much higher. We couldn’t test the spiraeoside as we have no standard sample at present.
